Nowadays people are becoming more n more health conscious & started looking for some better alternatives for rice and wheat to reduce its daily consumption.For those people, millets are really useful.
Samai / little millet is a traditional food item which has more nutritious values (Fiber, calcium, minerals and iron) when compared with rice and wheat. I have seen this recipe in one of the TV channel. I tried it immediately as I had all the ingredients in home. It tastes good and my son loves to eat it.
Ingredients:
Samai / little millet - 100 gms
Oil / ghee - as required for saute
Cinnamon - few
Green chilly - 2
Garlic - 5 to 8 cloves
Onion - 1
Egg - 2
Carrot - 1
Beans - 5
Capsicum -
Salt - as required
Make fine powder:
Fennel seed - 1 tspn
Roasted gram - 3tspn
Pepper - 2tspn
How to make:
Step 1: Boil samai and keep aside. (1 cup samai, 2-3cups water) Note that samai cooks very fast. So dont keep more than 6 to 7 minutes.
Step 2: Pour oil / ghee in kadai and add cinnamon, garlic, green chilly and roast it.
Step 3: Finely chop the vegetables (carrot, capsicum, onion, beans etc as u wish)
Step 4: Add onion and saute it for few seconds. Then add all other vegetables and saute it.
Step 5: Let the vegetables cook for some time and then add egg and saute.
Step 6: Once the egg is cooked (raw smell should go), add the powder (Fennel, roasted gram and pepper).
Step 7: Now add the cooked samai and mix well.
Step 8: Cover with lid and cook for 3 minutes.
Step 9: Garnish with corriander leaves and serve hot.
Note:
=> 100gms samai will be enough for two people.
=> You can replace samai with other millets like kudhirai vali, varagu, thinai etc.
